Our Menu Explained
Our current menu is a culmination of fifteen years of experience serving the greater Pittsburgh area and understanding our customers need while providing a top notch product for my team to consistently execute. We have chosen to highlight ingredients sourced from Italy & Sicily as well as items produced here in the United States to complete our recipes.
We currently blend two types of tomatoes for our signature sauce; one, an organic Neapolitan tomato from Italy and the other from a farm in New Jersey. In the same fashion, we are blending American grown grains with organic grains milled in Parma, Italy and using an old world pre-fermentation technique called Biga, which makes our dough easily digestible & healthy.
Our cheese blend comes from Wisconsin and our produce is delivered fresh multiple times a week. Our cured meats are sourced from Italy, Columbus, Ohio and, of course, here in Pittsburgh. The Extra Virgin Olive Oil we use in all of our recipes comes from an organic farm in Partana Sicily, that has been continually operating for over 100 years.
